Leaf-It!

Too often when cooking or preparing food or drinks today, we leave out the leaves. They may have been exposed to fertilizers during the food production process but there are ways around that.

We can as much as possible buy organic fruits and vegetables. Rinse the leaves in a vinegar/water solution before eating. Peel back the outer layer and use the inner leaves.

We can grow our own food. Whatever method you choose I recommend that you include the leaf in your preparation.

Lettuce, beets, spinach, kale, cabbage, and turnip greens to name a few.

Try this "leafy" nutritious drink for a morning energy boost or afternoon pick-me-up.

LEAF-A-LISH-US

You will need:

1-2 medium carrots*

1-2 handfuls of spinach leaves

1-2 celery sticks*

1 apple

*include the leaves

Mix and match, increase or decrease the amount you use depending on your taste preference. Red apples maybe a little sweeter than green, so you decide sweet or tart-tasting. You may want to shave the outer layer from the carrot and celery stick or leave it on. It is more nutritious to use the whole vegetable.

Blend it up and get energized in a healthy way!
